What's for lunch?

I bet those scrambled eggs were fluffy.

Well, yes. But I used real eggs and whipped air and cream into them with a whisk. The poor slobs at fast food joints probably have to reconstitute dehydrated egg powder with water into a gloppy mess. Hard to get that fluffy.

That sounds pretty delicious and, in the grand scheme of things, this next question doesn't matter for chit but when does that stop being a grilled cheese sandwich? With the proliferation of Neo-southern/soul restaurants lately it seems like everybody has a new take on the grilled cheese sandwich but they all seem to pack 3 different things into it that are far more impactful than the cheese itself.

I don't even know if what I made for lunch technically qualifies. Ham and cheese and scrambled egg is a clone of the Denny's Moons Over My Hammy breakfast sandwich. I just think of it as one because you make it the same way.

I guess for me the point at which it no longer qualifies is when the cheese stops being the main focus of the sandwich. I put four slices of cheese on the sandwich I made for lunch, so it was definitely still the star. Once you've loaded it up with meat and onion lettuce and tomato, it's really more of a toasted sandwich than anything.
 
Headed to Jacksonville to make a Costco run, so lunch is gonna be at Pollo Tropicale. Love that place, and it's my cheat day.
 
I made a ripoff of the Huddle House "Southern Smothered Biscuit Platter" for Saturday brunch. Open faced biscuit on the bottom, topped with bacon, hash browns, sausage gravy, cheese, and scrambled egg on top. A pretty damn magnificent meal. My hash browns need work though.

Highly recommend this strategy for hash browns, put them in a waffle iron. Makes for one hell of a base level for a horrifyingly delicious breakfast anything.

Friend of mine said in college he would make "loaded mashed potatoes" then just waffle iron em into crispy greatness.
