I am an Appalachian boy, so my platonic ideal of barbecue is pulled pork shoulder, tossed in what you might call a medium slather with a vinegary red sauce. I am frightened and confused by sauces in other colors. Other than that I'm generally accepting of other styles, other than the cow they serve in Texas. It tastes all right but it's not barbecue.
